What’s It Include? |
A blending kit (3 or 4 red wines in little beakers), measuring paraphernalia, a bit of background on wine tasting, instruction on blending wine, and a chance to create your very own award-winning cuvee, i.e., a bottle or carafe of custom wine you get to take home.

What’s It Cost? |
$40 for a 3 wine blending kit and a bottle’s worth of your finished blend in a bottle or beautiful Italian carafe.

What Do I Learn? |
A little background about grape varieties, how to taste wine, what structural and flavor components of a wine are important in blending, why winemakers blend wine, what some labels mean, the answers to any questions you have, and….

BEYOND THE CORK (aka Wine 101) CLASS
Have you ever gone into a wine shop and felt overwhelmed about what to buy? Well, here is the answer to your needs! Take our basic wine education course, “Beyond the Cork.” You will learn about quality established white and red wine grape varietals from around the world, the history behind them and the methods and techniques for analyzing them. When you leave the class you can buy wine with confidence!

What?
|
For anyone who wants to get beyond just drinking, we explore:
1. The history of wine, where it is grown, what are the main varieties, how wine is made, and why Oregon is suited for winegrape growing.
2. A comparison of New World wines (North and South America, Australia, New Zealand) and Old World wines (France, Italy, Spain, Germany).
3. How to taste wine and evaluate a sample. What are the characteristics of some of the best known wines.
4. How to pair wine with food. What works and what doesn’t.
5. Keys to purchasing wine.

Who?
|
The class is open to, and will be of benefit, to anyone over the age of 21. Both the rank novice and an experienced wine drinker will find something of interest, and will be treated to a specially selected assortment of wines from different regions, varieties, and vintages.

|
Alternating third Saturdays of each month, 1-2:00 pm.

Cost?
|
$40, a bargain which covers the instructor, samples of 6-8 wines, and a selection of cheese and crackers.

BITES AND FLIGHTS CLASS
Love Pinot noir but don't know what food it goes with? Confused about why you like red wine with salmon? Isn't it supposed to be white wine with fish? Come learn about basic food pairing featuring our selection of wines from Bishop Creek Cellars, Eastern Washington and around the world. We'll include some taste tempting bites that beautifully complement the flights.

Alternating third Saturdays, starting April 19th, 1-2:00 pm.

What?
|
Specially prepared canapes will be matched with different wines to showcase some elemental principles about which foods go best with which wines and, perhaps more importantly, which don't.

Cost?
|
$40 includes food pairings for each of four wines based on that month's theme, instruction and assistance from our culinary maven, and a "Cliff-the-Cook's Notes" manual with recipes and food and wine pairing suggestions.

Why?
|
Nothing puts a damper on a carefully prepared meal like a poorly selected wine. Don't commit social suicide by opening an expensive Barolo to go with a spinach salad, even if it is Popeye for dinner. This class will make you a classy meal matcher.
