Two great chocolate recipes from one of our preferred caterers, phresh.

Urban Wineworks 6 Year Anniversary Blend Paired with
Warm, Soft & Organic Dark Chocolate Cake with only 6 Ingredients

½ cup organic butter
4 oz. Dagoba organic bittersweet chocolate
2 organic eggs
2 egg yolks
¼ cup organic sugar
1 tablespoon organic flour

Melt the chocolate and butter over a double boiler (a metal bowl over steaming, simmering water) until nearly melted

While the chocolate is melting:

Beat eggs, yolks & sugar with a whisk or electric beater (preferred) until light, airy, thick.

Whisk the chocolate & butter together, add to the egg & sugar mixture, and mix until well combined.

Add the flour and whisk until just combined.

Butter & flour or spray four 4 ounce molds, custard cups, ceramic coffee cups or ramekins. Pour cake batter evenly into the molds.

Place cups/molds on a baking tray and into a pre-heated 450ْ oven for 6-8 minutes.

When done, the cake’s center will be very soft but the sides will be set and the cake may crackle on top.

With a hot pad or towel, serve immediately. Be careful as the cups and cake are very hot.

Bishop Creek Pinot Noir Hazelnut Brownies

¾ cup chopped toasted hazelnuts 1 cup packed brown sugar
8 oz. Bishop Creek Pinot Noir ½ teaspoon vanilla extract
½ cup butter 3 eggs lightly beaten
4 ounces unsweetened chocolate ¾ cup flour

Pre-heat oven to 350ْ – butter or use non-stick spray on an 8 or 9 inch square baking dish.

Combine chocolate, butter and Bishop Creek Pinot Noir.

Completely melt chocolate and butter on a double boiler (a metal bowl over steaming, simmering water). Stir occasionally.

Remove from heat and add brown sugar & vanilla – beating by hand or mixer until well combined.

Add eggs one at a time and beat well. Let the eggs incorporate fully, scrape bowl as needed.

Fold in the flour and mix thoroughly, until mixture is smooth. It is best to do this by hand with a whisk or spatula and not with a mixer.

Stir in hazelnuts. Pour batter into baking dish and bake for approximately 20-25 minutes.

Brownies are done when they begin to pull away from the sides of the pan. They will still be fudge-like in the center. Test with a toothpick for doneness. The toothpick will show moist crumbs but not raw batter.
